Brita cake is a beautiful cake for summer parties. The secret of Brita cake is a meringue layer baked on a cake base that makes the cake crispy and spectacular. In summer, Brita cake is filled with strawberry jam, fresh strawberries and vanilla cream. You can serve this cake cated for 10 pieces or as a hole cake.
Recipe
Cake base:
- 150 g Butter
- 140 g Sugar
- 4 pcs Eggs size M (yolks)
- 150 g Wheat flour
- 12 g Baking bowder
- 75 g Double cream
- 25 g Milk
Meringue:
- 4 pcs egg whites
- 140 g sugar
- 6 g vanilla sugar
Filling:
- 350 g double cream
- 250 g fresh cheese
- 50 g sugar
- 3 g vanilla sugar
- 250 g stawberry-rhubarbjam
- 350 g fresh stawberries
Decoration:
- 150 g fresh strawberries
- fresh herbs like mint
- enible and organic produced flowers
- 2 g powdered sugar
Equipment
- scale, oven tray, baking paper, pastry brush, metal bowls, universal machine or electric mixer, spatulas, sieve for sifting flour, oven, tablespoons, rubber gloves, cutting board, knifes, piping bag, dull, small sieve for sifting powdered sugar
Instructions
- Place a baking paper on the bottom of a baking dish (about 43 cm x 37 cm) and grease it thinly with melted butter.
- Separate the eggs yolks and whites.
- Cream the soft butter and sugar until white foam and add the yolks one by one while still foaming.
- Mix the dry ingredients. Measure the liquids and whisk them together.
- Add the dry ingredients. Use a sieve for sifting the flour to the foam. Add also the liquids with a spatula. Do not whisk.
- Spread the dough on the baking dish and make the meringue.
- Whisk the egg whites until soft peaks form.
- Add the sugar gradually to the foam by whisking all the time.
- Finally, add vanilla sugar.
- Spread a wavy layer of meringue on top of the foamed shortbread.
- Bake at 160 degrees for 20 minutes.
- Let the cake cool down well. Remove the base from the baking paper with a knife and cut it in half.
- Hull and cut the strawberries into four or six pieces.
- Whip the double cream.
- Whip the cream cheese and spice it with sugar. Combine with double cream.
- Lift the second cake plate onto the serving plate.
- Spread the jam on the top of the cake base.
- Carefully spread the cream and cream cheese foam on top of the jam using a spatula or tablespoon.
- Put the strawberry pieces on top.
- Lift the second base of the cake on top of the first base.
- Place a dull in a piping bag and put the rest of the double cream and fresh cheese foam in a piping bag.
- Decorate the cake with the whipped cream, strawberries, flowers, herbs and powdered sugar.
