
About the recipe
Cinnamon buns are cinnamon flavored wheat pastries that have become an important part of Finnish food culture.
Recipe
- 250 g Milk
- 30 g Yeast
- 3 g Cardamom
- 113 g Sugar
- 1 pcs egg (size M)
- 4 g Salt
- 500 g Wheat flour
- 75 g Butter
Filling:
- 60 g butter
- 40 g sugar
- 6 g cinnamon
Decoration:
- 1 pcs Egg
- 40 g Hail sugar
Equipments:
- scale, metal bowls, universal machine or electric mixer, tablespoon, teaspoon, baking cloth, baking paper, oven,
Instructions
- Warm milk 27 – 35 ˚C.
- Mix the yeast in to the warm milk.
- Add sugar, cardamom and whisked eggs.
- Mix the flour in to the as simultaneously as possible. Use universal machine and a dough hook if possible.
- Add flour first with low speed but when the flour starts to incorporate into the dough, increase the speed to a medium range.
- Knead the dough well after adding the flour.
- At the end, add room temperature butter. The dough must be smooth and elastic.
- Cover the dough with a cloth or fresh film and let it rest and double in volume in a warm place.
- Knead the dough to rest afterwards on the baking table, so that its blister structure is evened out.
- Divide the dough into pieces of the desired size and bake into desired pastries.
- Place the pastries on the baking paper and cover.
- Cover the buns with a baking cloth and let the buns rise in a warm place until their surface feels springy.
- If you want color in the pastries, brush them with an egg.
- Bake at 180 degrees for 12 minutes.
- If you want a crispy surface for your pastries, use the steam function of the oven for the first 5 minutes and then bake the pastries in a dry oven.
- After baking, cover the buns with a cloth if you want a soft surface.
